Properly salted water makes a big difference to the taste of pasta. To cook one pound of pasta, add 2 tablespoons of salt to 4 – 5 quarts of boiling water. The water will froth a bit when the salt is added. Stir in the salt, then stir in the pasta. Once the pasta is added and the water is boiling again, slightly reduce the heat to prevent boiling over. The well-salted water will flavor the pasta, following the concept of layering the seasoning throughout the cooking process.
