Mosaic almond sweet cookies

These cookies are fresh and fun and are the perfect delectable treat for friends or a savory moment of personal indulgence.

Yield: 2 dozen


  • 3/4 cup Butter
  • 3/4 cup Sugar
  • 1/4 tsp Salt
  • 1 Egg , separated
  • 1/2 tsp Almond extract
  • 2 tsp Grated orange rind
  • 1 1/2 cup Flour
  • 3/4 cups Sliced almonds
  • 2 tbsp Honey


  1. Preheat oven to 350°F
  2. Beat butter and sugar until light. Beat in salt, egg yolk, almond extract, and orange rind. Add flour and mix until just combined. Press over the bottom of a parchment lined 9”x13” pan. Beat the egg white until frothy and brush over the dough. Sprinkle the almonds evenly over all and bake for 30 minutes.
  3. Brush with 2 tablespoons of honey and bake for 15 minutes more. Cool slightly and cut into squares.
