    • 1 cup Flour

    • 2 ¾ tsp Baking powder
    • 1/2 tsp Salt
    • 1/2 cup Butter
    • 1 cup Sugar
    • 4 Eggs
    • 1 tsp Vanilla

    • 2 small Pears, peeled and sliced thin
    • 1/4 cup Butter
    • 1/2 cup Brown sugar
    • 1/2 cup Cranberries, frozen

    Directions

    1. Preheat oven to 350°F.
    2. Topping: Melt butter & brown sugar, spread evenly on bottom of 9” cake pan. Arrange sliced pears & frozen cranberries on bottom of pan. Set aside.
    3. Cake: Sift together the flour, corn meal, baking powder and salt. Beat the butter and sugar together with mixture until light. Add the eggs, one at a time, scraping the bowl occasionally. Beat in the vanilla. Gradually add the flour mixture and mix until just combined. Spoon the dough over the fruit and smooth the top. Bake for 45 minutes or until done. Remove from the oven and let cool 5 minutes. Carefully, invert onto a plate.
    4. Cool slightly before serving.
