- 1 recipe "Pinot Grigio Vinaigrette"

- 2 tbsp Pinot Grigio wine vinegar
- 1 tbsp Dijon mustard
- 1/2 tbsp Honey
- 1 tbsp Extra virgin olive oil
- 1 tbsp Minced shallots
- 1 tsp Minced fresh garlic
- 2 tbsp Finely chopped fresh flat-leaf parsley leaves
- To taste Salt
- To taste Black pepper

Green Beans
- Place a steamer insert in a Circulon Contempo 3 qt Covered Saucepan. Fill the pot with water so it reaches just below the steamer rack. Place the pot over high heat and bring the water to a boil. Add the green beans and cover the pot. Cook them until crisp tender, about 4-6 minutes.
- Remove the green beans to a large glass or plastic bowl, making sure to drain any excess moisture from the beans. Gently toss the green beans with the vinaigrette until they are completely coated.
- Transer the beans to a serving platter or divide among 4 plates. Serve immediately. Season with additional salt and pepper, if desired.

Pinot Grigio Vinaigrette
- In a small bowl, whisk together the vinegar, mustard and honey. Slowly whisk in the olive oil. Stir in the shallots, garlic, and parsley until well combined. Season with salt and pepper. Dressing can be made up to 5 days in advance.
